Sweet + Tangy Brussels Sprout Quinoa Salad

Ingredients

Salad:
  • 1 12 oz bag of Brussels sprouts, shaved (use food processor or purchase pre-shaved)
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped
  • 1 cup cooked quinoa
Sweet + Tangy Dressing
  • 2 Tablespoons red wine vinegar
  • 2 Tablespoons Dijon mustard
  • 1 Tablespoon raw honey
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon cracked black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/3 cup olive oil

Instructions

  1. Mix dressing ingredients together in bottom of large mixing bowl.
  2. Add all salad ingredients and mix thoroughly

Notes:

For meal prep you can mix together and store for 1-2 days in fridge (salad will be more of a slaw without the crunch) or for a crunchy salad store dressing separately and mix immediately immediately before serving.
