Sweet + Tangy Brussels Sprout Quinoa Salad

Ingredients
Salad:
- 1 12 oz bag of Brussels sprouts, shaved (use food processor or purchase pre-shaved)
- 1/2 cup dried cranberries
- 1/2 cup pecans, chopped
- 1 cup cooked quinoa
Sweet + Tangy Dressing
- 2 Tablespoons red wine vinegar
- 2 Tablespoons Dijon mustard
- 1 Tablespoon raw honey
- 1/4 teaspoon sea salt
- 1/8 teaspoon cracked black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/3 cup olive oil
Instructions
- Mix dressing ingredients together in bottom of large mixing bowl.
- Add all salad ingredients and mix thoroughly
Notes:
For meal prep you can mix together and store for 1-2 days in fridge (salad will be more of a slaw without the crunch) or for a crunchy salad store dressing separately and mix immediately immediately before serving.
