Big Mac Salad
Normally, I just give you the recipe without much fanfare, but this one deserves some special notes! Please use my recipe as a guide and customize it with your favorite veggies and add-ons. Additionally, you can form patties and make a traditional burger or do what I did and quickly brown up the ground beef. Fun fact: I have never had a Big Mac in my life, but I love this salad!
I like to serve it buffet style, so the kids can create their own - use whatever toppings you like (just do NOT forget the pickles!):

Ingredients
Salad Ingredients
- 6 cups lettuce mix (Romaine, iceberg, or butter lettuce)
- 1 tsp olive oil
- 1 pound lean ground beef (or turkey)
- 2 teaspoons seasoning of your choice (I use Penzey’s chip + dip seasoning or you could use 1 tsp salt, 1/4 tsp pepper, 1/4 tsp onion powder, 1/2 tsp garlic powder)
- 1/4 cup water
- 2 cups cherry tomatoes
- 1/4 cup sliced onion
- 1/4 cup shredded cheddar cheese or cheddar blend
- 1/4 cup dill hamburger pickles
- ANY additional veggies or sprouts of your choice
Secret Sauce Ingredients
- 3/4 cup mayo (or 1/2 cup mayo, 1/4 cup nonfat Greek yogurt to cut back on fat and calories)
- 1 tablespoon Dijon mustard (I used Trader Joe’s Pale Ale Honey Mustard)
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 3 tablespoons minced dill pickle
Instructions
- Heat oil in a large skillet over medium-high heat.
- Add the ground beef (you could also form patties and make burgers mixed with the seasoning)
- Brown the ground beef for 5-6 minutes, drain off fat, then add your seasoning and water.
- Bring to a simmer and stir well until all beef is cooked and coated evenly in the seasoning.
- While beef is cooking, mix together all secret sauce ingredients and chop all veggies.
- Once beef is cooked through, each person can assemble their own salad and enjoy immediately!
You can also make your Big Mac Salad into a low-carb burger and fries dinner and serve with Turnip Fries!
