Healthy Shepherd's Pie {low-carb}
This simple cauliflower mash takes just a couple steps to throw together - buh-bye carbs, hello veggies and tastes soooooo good! My boys gobbled it up and had no clue they weren't eating potatoes. This recipe is for healthy shepherd’s pie.
I did finally tell them a few hours later and they are still mad at me, hahaha! They like certain veggies, but cauliflower isn't one of them!

Healthy Shepherd's Pie

Ingredients
- 1 pound lean ground beef or turkey
- 2 cups frozen mixed vegetables
- 1 large head cauliflower, chopped
- 2 Tablespoons tomato paste
- 1/2 teaspoon Worcestershire sauce
- 1 1/2 teaspoon FlavorGod Garlic and Herb Salt
- 1/2- 1cup cup chicken or beef broth
- 1 tablespoon corn starch
- 2 tablespoons cream cheese
- 1/4 cup parmesan cheese
- 1/4-1/2 cup whole milk
- salt and pepper to taste
- shredded cheddar cheese (optional)
Instructions
- Preheat oven to 375 degrees
- Brown ground beef in medium, oven-proof skillet (preferably cast iron)
- Season beef with FlavorGod Garlic and Herb Salt and stir well (you could substitute with some garlic salt and Italian seasoning -but this combo is amazing!!!!.
- While beef is browning, steam cauliflower in microwave for 8-11 minutes until cooked through and tender to fork.
- Place half of cooked cauliflower in a blender or food processor, add cream cheese, Parmesan cheese and blend well. Add additional cauliflower one piece at a time and add in 1/4 cup whole milk as you blend. Blend until smooth and add additional milk if needed until mashed potato consistency is achieved. Season with salt to taste.
- Add tomato paste and Worcestershire sauce to cooked ground beef and stir well.
- Add broth and stir again, then sprinkle in corn starch and simmer until gravy thickens, add more broth depending on gravy consistency desired.
- Add in frozen veggies and stir well.
- Top with cauliflower mash and spread evenly. Sprinkle with small amount shredded cheddar and place skillet in oven.
- Bake 30-35 minutes until top of cauliflower is browned and gravy is bubbling.
- Allow to cool 5-10 minutes before serving.
