Easy Cloud Bread Pizza
This post is about easy cloud bread pizza.
Cloud bread is taking over the internet recently and it isn’t just for people on the keto craze! Believe me, I LOVE carbs and eat them every day except at dinner. Carbs are for ENERGY and I don’t need them at the end of the day - but I do love pizza! When I saw this idea, I HAD to make it for myself and it did not disappoint!
WHAT is cloud bread?
Cloud bread is an egg-based bread substitute and you can find many recipes out there. Some include things like cream cheese or cottage cheese and it is often suggested for people on diets where carbs are avoided or perhaps need gluten-free options. Just to be clear - I do not believe in cutting out food groups and I DO enjoy regular crust pizza on occasion and love to make homemade pizza dough! I’m always experimenting in the kitchen and love love love this healthier option!
Is cloud bread complicated to make?
Don’t be intimidated by this recipe! I have heard of MANY cloud bread fails with other recipes, but this one is tried and true - plus I’ll share my tip that makes perfect whipped eggs whites every time! I used carton egg white, because I don’t like the idea of wasting the egg yolks and it came out perfectly.
Tips for perfect cloud bread:
for use an electric mixer or milk frother to whip your eggs, you can use a hand whisk but it is going to take a LONG time
use a METAL mixing bowl and place it in the freezer at least one hour prior to whipping the eggs
whip on HIGH speed (I used speed 8 on my Kitchen-Aid mixer) until eggs whites softly peak (see image below)
add corn starch and seasonings, then whip on medium speed 3-4 times just to combine
you MUST use parchment paper, NOT wax paper and I don’t recommend greasing your baking sheet either.
Cloud Bread Pizza
Ingredients
- 4 egg whites (3/4 cup carton egg whites)
- 2 1/2 teaspoons corn starch
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/2 cup cooked Italian turkey sausage
- turkey pepperoni
- 1/4 cup diced red pepper
- 1/4 cup diced onion
- 1/2 cup - 1 cup shredded Italian cheese mix
- *get creative and use whatever pizza toppings you like - but this is what I used in the photo
Instructions
- Preheat oven to 300 degrees.
- Line a large baking sheet with parchment paper.
- Remove your metal mixing bowl from freezer and whip your egg whites until they are soft peaks - (it took about 5ish minutes using my Kitchen-Aid on speed 8).
- Add corn starch and seasonings to egg whites and stir just to combine.
- Spread egg white mixture on parchment lined baking sheet.
- Bake for 23-25 minutes until cooked through and very lightly brown on edges.
- Remove from oven and INCREASE oven heat to 400 degrees.
- Place toppings on baked cloud bread dough, then once oven is at 400 degrees, place pizza in oven for about 5 minutes until cheese is melted and toppings are heated. The edge of the crust will be nicely browned as well.
- *you can re-heat leftovers in microwave or air fryer, just like you would regular pizza!
