Taco Peppers

Ingredients

  • 1 lb lean ground beef or turkey
  • 4 medium bell peppers, sliced in half lengthwise and deseeded
  • 1 small zucchini, diced
  • 1 small onion, diced (about 1/3 of a cup)
  • 1 tsp olive oil
  • 3 tablespoons Homemade Taco Seasoning
  • 2/3 cup water
  • 1/2 cup salsa
  • 1/4 cup taco sauce
  • 1/2 cup shredded cheddar or Mexican blend cheese

Instructions

  1. Pre-heat oven to 375 degrees
  2. Heat the olive oil in a medium skillet and add the zucchini + onion, cook for 5 minutes until onions are translucent and squash is softened.
  3. Add the ground beef to the pan and brown.
  4. Add taco seasoning and water, bring to a simmer and cook an additional 1-2 minutes until thickened and well combined.
  5. Pour salsa into 9x13 casserole dish.
  6. Place peppers in pan and fill each pepper with taco meat (about 1/4 - /3 cup per pepper.
  7. Drizzle with taco sauce.
  8. Top with cheese.
  9. Cover with foil and bake for 20 minutes, then remove foil and bake an additional 5-10 minutes until cheese is lightly browned and peppers are bubbling.
