Taco Peppers

Ingredients
- 1 lb lean ground beef or turkey
- 4 medium bell peppers, sliced in half lengthwise and deseeded
- 1 small zucchini, diced
- 1 small onion, diced (about 1/3 of a cup)
- 1 tsp olive oil
- 3 tablespoons Homemade Taco Seasoning
- 2/3 cup water
- 1/2 cup salsa
- 1/4 cup taco sauce
- 1/2 cup shredded cheddar or Mexican blend cheese
Instructions
- Pre-heat oven to 375 degrees
- Heat the olive oil in a medium skillet and add the zucchini + onion, cook for 5 minutes until onions are translucent and squash is softened.
- Add the ground beef to the pan and brown.
- Add taco seasoning and water, bring to a simmer and cook an additional 1-2 minutes until thickened and well combined.
- Pour salsa into 9x13 casserole dish.
- Place peppers in pan and fill each pepper with taco meat (about 1/4 - /3 cup per pepper.
- Drizzle with taco sauce.
- Top with cheese.
- Cover with foil and bake for 20 minutes, then remove foil and bake an additional 5-10 minutes until cheese is lightly browned and peppers are bubbling.
