Mediterranean Greek Salad with Spicy Salmon + Homemade Dressing
Do you have an air fryer? I waited to get on the air fryer wagon for way too long and now it is one of the most used appliances in my kitchen. Salmon is hands-down my favorite thing to cook in it and this recipe is so quick and easy. Enjoy!

Greek Salad with Spicy Salmon

Ingredients
Salad Ingredients
- 2 cups lettuce mix of your choice (I like butter lettuce for this salad)
- handful of chopped cucumber
- handful of chopped grape tomato or tomato
- 2 tablespoons feta cheese
- 5 strips of roasted red peppers in olive oil
- 6 pitted Greek Kalamata olives
Dressing Ingredients
- 1/2 cup extra virgin olive oil
- 1/2 cup apple cider vinegar
- juice of 1 medium lemon
- 1 1/2 tablespoons Greek seasoning (I used Super Gyro from Primal Palate)
- 1 teaspoon onion powder
- 1 teaspoon honey mustard
- 1 teaspoon sea salt
- 1/4 teaspoon fresh ground pepper
Instructions
- Mix all dressing ingredients in a blender or vigorously shake in bottle - place in refrigerator to chill.
- Place salmon skin side down in air fryer, sprinkle top with Greek seasoning and air fry at 400 degrees for 8-10 minutes until top is starting to brown.
- Open air fryer and spread hot pepper sauce on top of salmon - cook an addition 2-3 minutes until salmon is cooked through and flaky
- Assemble salad ingredients, top with salmon and then drizzle with 2 tablespoons dressing
