Garlic Butter Steak Bites with Roasted Veggies

Garlic Butter Steak Bites with Roasted Veggies

Ingredients

Steak
  • 1 tablespoon butter
  • 2-3 cloves garlic, pressed
  • salt and pepper to taste
  • juice of half a lemon
Roasted Veggies
  • 1 red pepper, chopped into bite size pieces
  • 1 medium onion, chopped into bite size pieces
  • 1 cup baby bella mushroom, cut in have lengthwise
  • 1 medium zucchini, but into bite size pieces
  • 1 teaspoon olive oil
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

Roasted Veggies
  1. While chopping veggies, preheat oven to 425 degrees
  2. Mix chopped veggies in large bowl with olive oil, salt, pepper, onion powder, garlic powder
  3. Place veggie mixture single layer on your largest baking sheet, use two sheets if needed. You do not want them to be crowded on the baking sheet or the veggies will steam and not brown.
  4. Bake for 25 minutes or until veggies are browned and tender, set timer to stir every 10 minutes. 
Steak
  1. After veggies have cooked about 10 minutes , heat large skillet over medium heat.
  2. Place butter in skillet and quickly add steak stirring to coat the steak on all sides with the butter.
  3. Add the garlic, salt and pepper to the pan and stir.
  4. Stir and cook steak until all sides are browned a little crispy and steak is cooked medium-well, about 7-10 minutes total. 
  5. Squeeze lemon juice on top right before serving.
  6. Serve with the roasted veggies immediately!
