Oatmeal bake is a great recipe for busy mornings - I like to bake a pan on Sunday as a make ahead breakfast for weekdays. Regular oatmeal can be time consuming and hard to eat on the go. This easy baked oatmeal can be cut into individual portions ahead of time and stored in an airtight container. This is a very easy on-the-go healthy breakfast.

Substitutions

You can easily substitute many of the ingredients to suit your preferences. I like to mix blueberries and some strawberries, but you could easily do all blueberries or frozen mixed berries. For a more decadent dessert you could use chocolate chips!

If you’re dairy-free, use coconut milk or almond milk in place of whole milk. Use margarine or coconut oil in place of butter.

Flax Eggs Recipe (makes substitution for ONE egg)

Simply mix 1 tablespoon ground flax seed with 2 1/2 tablespoons water. Let sit for 5 minutes until thickened. This makes ONE “flax egg”. To make the baked oatmeal recipe you will need TWO flax eggs, so double the flax egg recipe.

What to serve with your baked oatmeal

Baked oatmeal makes a great carb for breakfast, but you may want to add some protein so you stay full and satisfied. If you are in my Nutrition Bootcamp, you know half carb/half protein is the best way to start your day. I recommend having your Shakeology, eggs, cottage cheese, or some Greek yogurt with your baked oatmeal.

Healthy Blueberry Baked Oatmeal Recipe

Ingredients

  • 2 cups old fashioned oats
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon baking powder
  • ¾ teaspoon sea salt
  • 1 ¾ cups milk of choice (I use whole milk or unsweetened almond milk)
  • ⅓ cup maple syrup
  • 2 large eggs
  • 3 tablespoons melted unsalted butter or coconut oil, divided
  • 2 teaspoons vanilla extract
  • 2 cups frozen blueberries (I prefer the little wild Maine berries)
  • 1/2 cup sliced frozen strawberries
  • 2 teaspoons raw sugar (optional)

Instructions

  1. Preheat oven to 375 + spray 9X9 or 8x8 square baking dish with coconut oil.
  2. Mix oats, cinnamon, nutmeg, baking powder, salt together in large bowl.
  3. Whisk milk, maple syrup, eggs, melted butter, and vanilla extract together in large mixing bowl.
  4. Pour wet ingredients over dry mixture and stir with spatula until just combined.
  5. Once combined, pour HALF of the oat mixture evenly over bottom of entire pan
  6. Reserve a half cup of blueberries - and spread remaining berries evenly over the oatmeal mixture.
  7. Pour remaining wet oatmeal mixture evenly over berries.
  8. Top with remaining blueberries and all the strawberries.
  9. Sprinkle top of berries with the raw sugar
  10. Bake for 55-60 minutes. Add baking time if needed until top is browned and mixture is cooked through. Allow to cool completely before slicing and serving.
  11. Store for up to 3 days tightly covered with plastic wrap in fridge - reheat individual slices in microwave for 30-60 seconds before serving leftovers.
