Easy Mediterranean Chopped Salad
Ingredients
- 1 English cucumber, chopped into bite size pieces
- 1 pint grape or cherry tomatoes, halved
- 1/4 cup kalamata olives, chopped
- 3 tablespoons red onion, minced
- handful fresh parsley, minced
- handful fresh dill, minced
- 1 teaspoon Italian dressing seasoning like Good Seasons
- 3 tablespoons red wine vinegar
- 1 tablespoon olive oil
Instructions
- Mix all ingredients together in a large salad bowl.
- Refrigerate 30 minutes before serving or use for up to 3 days as part of your weekly meal prep.
