As you can see, I like to use a pre-made mix, but you can easily make your own with some kosher salt, ground black pepper, lemon juice and olive oil- this will still be a tasty salad.

 How to store leftovers

If you're not eating your chopped salad right away, store in an airtight container for up to 3 days. Make sure to keep the dressed salad separate from any crisp lettuce greens until immediately before serving. I love having chopped salad on hand for a light dinner side dish or healthy lunch recipes. Ingredients

  • 1 English cucumber, chopped into bite size pieces
  • 1 pint grape or cherry tomatoes, halved
  • 1/4 cup kalamata olives, chopped
  • 3 tablespoons red onion, minced
  • handful fresh parsley, minced
  • handful fresh dill, minced
  • 1 teaspoon Italian dressing seasoning like Good Seasons
  • 3 tablespoons red wine vinegar
  • 1 tablespoon olive oil

Instructions

  1. Mix all ingredients together in a large salad bowl.
  2. Refrigerate 30 minutes before serving or use for up to 3 days as part of your weekly meal prep.
