Are you wondering what the heck a Wonder Whip even is? Well - if you’re like me and have a sweet tooth, welcome to your new best friend! A Wonder Whip is a delicious yogurt based dessert that takes just a few minutes to “whip up” hahahaha! It tastes like soft serve ice cream, but will keep you full and satisfied and on track with your weight loss goals - you can see my Peanut Butter Cup Wonder Whip Recipe here.
As with all my recipes, I encourage you to use it as a guide and tweak it to match your own taste. I LOVE the tartness of lemon, so add more stevia if you like yours sweeter.
First things first - I LOVE lemon. I remember my family had annual potluck we went to every year and this one woman made the most delicious lemon bundt cake every year. I would go back to the dessert table and eat piece after piece and finally one year, she made me my very own cake! My days of eating an entire cake by myself are OVER and I’m not much of a baker - so being able to whip up this yummy and healthy lemon dessert in just 5 minutes is a life saver!
This recipe idea came to me after I ordered this King Arthur Flour Lemon Juice Powder - I bought it with the intention to bake with it, but then thought it would make a fantastic add-in for a wonder whip! Don’t have lemon juice powder on hand? No worries - I have another option for you, but I WILL say the lemon juice powder was so easy, I highly recommend purchasing some. I cannot speak for other brands - for me, King Arthur Flour is a trusted brand (fun fact, I used to live just a mile down the road from their flagship store!) and I love supporting their company, but I do see there are other options on Amazon, if you want to give them a try.
If you have some coconut extract that may add some nice flavor, as well - but I didn’t have any on hand. Let me know what you think and if you made any tweaks!
Lemon Coconut Wonder Whip
Ingredients
- 1/2 cup 0% or 2% Greek yogurt
- 1 teaspoon lemon juice powder OR 1 tablespoon fresh squeezed lemon juice
- 1 tablespoon unsweetened, shredded coconut
- 1 teaspoon real maple syrup OR 3 drops liquid stevia
Instructions
- Mix all ingredients together and enjoy!
