Healthy Lunch Idea: Superfood Power Salad
This is literally one of my FAVORITE recipes of all time - once the weather starts getting warmer, I CRAVE it! It has ALL my favorite things from mango and avocado to the tangy dressing. While I do eat meat - I definitely prefer this salad vegetarian, it is so filling, delicious and versatile.
It is incredibly easy to pack for lunches, just make sure to leave the dressing on the side until right before you eat.
I also love to serve this for get togethers and its great for a pot luck - have fun with it and enjoy!

Superfood Power Salad

Ingredients
Salad Ingredients
- 6 cups spinach or mixed salad blend of your choice
- 1 cup grape tomatoes sliced in half
- 1 ripe mango, diced
- 1 cup cooked quinoa
- 1 ripe avocado, diced
- 2 ounces crumbled goat cheese
- 1 can drained and rinsed chickpeas
- 2 tablespoons roasted sunflower seeds
Dressing Ingredients
- For the dressing:
- 1/4 cup olive oil
- 1/4 cup cider vinegar
- 2 tablespoons fresh squeezed lemon juice
- 1 tablespoon red onion, minced
- 1 tablespoon honey
- 1 1/2 teaspoons poppy seeds
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Mix all ingredients for dressing in an empty jar or small bowl, shake or whisk until combined.
- Place salad mix in large serving bowl.
- Layer quinoa, tomatoes, avocado, mango, goat cheese, chickpeas, and sunflower seeds.
- If serving a large crowd, mix dressing immediately in serving bowl before serving. Otherwise, dress each bowl individually and save remaining dressing in fridge up to 5 days.
