Are you looking for a quick and easy crustless low carb quiche Lorraine recipe? This easy quiche recipe skips the heavy cream and buttery crust of traditional quiche Lorraine. This recipe may be lighter on calories than a traditional quiche recipe, but it is still big on flavor!

The main difference between this recipe and the quiche Lorraine you would normally find on a restaurant menu is the flaky crust. While I do LOVE a great pie crust, I also find it a bit fussy when cooking for my family. Crustless low carb quiche recipes are much easier to prepare.

Also - fun fact, Lorraine was my “French” name in middle school French class. I only took two years of French, but that name has stuck in my memory.

The ingredients

These simple ingredients are what make quiche recipes a great way to whip up a healthy, delicious meal in no time.

Eggs: Eggs are an essential part of of any quiche recipe - they will form the base of your egg mixture. This crustless quiche Lorraine recipe relies on eggs as a foundation to helping the quiche hold its shape. I recommend using large or extra large eggs in this quiche recipe. You could lighten things up further by using egg whites or a mix of egg whites and whole eggs.

Cheese: I used Swiss cheese, but you could use gruyere cheese or a mixture of the two. As much as I love cheddar cheese on pretty much ANYTHING - I do feel Swiss or gruyere levels up the flavor in this recipe.

Milk: Traditional quiche Lorraine calls for heavy cream, but I promise the mix of 2% milk and half and half is perfection and what Skinnytaste uses in her quiche Lorraine recipe. Even without heavy cream, this recipe is still rich, creamy and delicious.

 Bacon or Ham: I used a mix of thick cut bacon and off-the-bone deli ham. You could use 6 slices of bacon or 3 slices of deli ham, diced. Use whatever you have on hand.

 Additional add-ins: This is a great recipe to get creative with. Feel free to add in green onions, some caramelized onion or even some ½ cup chopped broccoli or some spinach. It wouldn’t be considered quiche Lorraine, but it will still be delicious! 

 Pie pan: I made this recipe at my lake house and after mixing up the filling, realized I didn’t have a pie dish to use! Instead I used a stoneware 8X8 casserole dish and it worked out just fine! So if you don’t own a pie plate, just use your favorite brownie pan.

 Cooking time: This crustless quiche Lorraine recipe took me about 45 minutes from start to finish. It took about 10 minutes to cook the bacon, mix the egg mixture and then 35 minutes to bake. 

What to serve with Crustless Low Carb Quiche Lorraine

 The best thing about this recipe is its flexibility as an easy meal any time of day. It makes a perfect breakfast, lunch or dinner. 

If you are serving this delicious low carb quiche for breakfast, I recommend some toast or fresh fruit. For a lunch or dinner option, it is perfect with a mixed green salad.

Crustless Low Carb Quiche Lorraine

Easy crustless low carb quiche Lorraine recipe. Perfect for a healthy breakfast, lunch or dinner!

Ingredients

  • 6 large or extra large eggs
  • 2/3 cup 2% milk
  • 1/4 cup half and half
  • 3 slices of bacon (thick cut or center cut)
  • 2 slices deli ham (I think off-the-bone style is best), chopped
  • 1 cup Swiss cheese or gruyere cheese, shredded
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • cooking spray

Instructions

  1. Preheat oven to 350 degrees
  2. Spray an 8 inch pie plate or brownie dish with cooking spray
  3. Place a cast iron skillet or nonstick skillet on medium high heat and cook the bacon until browned and slightly crispy on edges.
  4. Chop the ham into bite size pieces
  5. In a large mixing bowl add the eggs, milk, half and half, salt and pepper
  6. Whisk until well combined.
  7. Chop the cooked bacon into bite size pieces and place on bottom of your prepared quiche pan.
  8. Add chopped ham to pan.
  9. Place cheese on top of bacon and ham.
  10. Pour egg mixture over bacon, ham, and cheese.
  11. Bake for 35 minutes until cooked through. You may also turn the heat up to broil and and broil for 2-3 minutes for a crispier edge and top of your quiche.
