Fresh, light and full of flavor - this will quickly become one of your favorite meals! If you don’t have an air fryer, you can set your oven at 450 degrees and follow same directions!

Sesame Ginger Air Fryer Salmon with Spicy Cucumber Salad

Ingredients

  • 1/3 cup Annie's Organic Sesame Ginger Vinaigrette
  • 1 pound salmon, cut into 4 portions
  • 2 hothouse cucumbers, thinly sliced
  • 1 jalapeño, thinly sliced
  • Handful of fresh mint leaves, chopped
  • 1/2 cup seasoned rice vinegar
  • 1/2 teaspoon salt
  • 1 teaspoon sugar

Instructions

  1. Pour ¼ cup Annie’s Sesame Ginger Vinaigrette into the bottom of medium bowl or baking dish
  2. Marinate salmon portions skin side facing up in dish for 5 minutes
  3. Mix cucumber slices, hot pepper, mint, vinegar, salt, + sugar together in a large mason jar or medium bowl. Chill cucumber salad in the refrigerator, stirring every 5 minutes while salmon is cooking.
  4. After salmon has marinated for 5 minutes, place skin side down in air fryer
  5. Air Fry at 400°F for 8 minutes
  6. Drizzle salmon with remaining vinaigrette and air fry an additional 1-2 minutes until cooked through, browned and crispy on edges
  7. Using a slotted spoon to eliminate excess pickling juices, place ¼ cucumber salad topped with 1 salmon portion on each plate. Serve immediately!
