Sesame Ginger Air Fryer Salmon with Spicy Cucumber Salad

Sesame Ginger Air Fryer Salmon with Spicy Cucumber Salad

Ingredients
- 1/3 cup Annie's Organic Sesame Ginger Vinaigrette
- 1 pound salmon, cut into 4 portions
- 2 hothouse cucumbers, thinly sliced
- 1 jalapeño, thinly sliced
- Handful of fresh mint leaves, chopped
- 1/2 cup seasoned rice vinegar
- 1/2 teaspoon salt
- 1 teaspoon sugar
Instructions
- Pour ¼ cup Annie’s Sesame Ginger Vinaigrette into the bottom of medium bowl or baking dish
- Marinate salmon portions skin side facing up in dish for 5 minutes
- Mix cucumber slices, hot pepper, mint, vinegar, salt, + sugar together in a large mason jar or medium bowl. Chill cucumber salad in the refrigerator, stirring every 5 minutes while salmon is cooking.
- After salmon has marinated for 5 minutes, place skin side down in air fryer
- Air Fry at 400°F for 8 minutes
- Drizzle salmon with remaining vinaigrette and air fry an additional 1-2 minutes until cooked through, browned and crispy on edges
- Using a slotted spoon to eliminate excess pickling juices, place ¼ cucumber salad topped with 1 salmon portion on each plate. Serve immediately!
