Fire Cracker Jicama Tacos (Low-Carb)

1 pound Walden Local Meat, Co. raw Fire Cracker sausage or chorizo

1 package Jicama Wraps (I found them at Trader Joe’s - I think it would be REALLY hard to slice them thin enough at home…)

2 cups finely shredded cabbage

3 tablespoons Trader Joe’s Spicy Cashew Dressing (or a spicy ranch if you don’t have a Trader Joe’s nearby)

Optional toppings:

Shredded cheese

Pico de Gallo

Guac

Sour cream or greek yogurt

  1. Remove sausage from casing and cook throughly, breaking into bite size chunks

  2. While cooking sausage, mix cabbage and dressing and set in fridge

  3. Once sausage is cooked through, assemble tacos with sausage, then slaw and desired toppings

P.S. This only took about 15 minutes to make! So make sure you save it for a quick dinner idea!
