The Best Egg Roll in a Bowl
Have you made egg roll in a bowl yet? There are a TON of egg roll in a bowl recipes out there and I’ve tried many of them! If you’re looking for a simple, healthy and flexible egg roll in a blow recipe - I think you’ll love mine!
Do I need to use ground pork?
Nope! After trying many recipes, I definitely prefer the ground pork. I use local, pasture-raised pork, so it is very lean. If you do use a fattier pork, make sure to drain it!
You can easily substitute any protein - ground beef, chicken, turkey, or even cubed tofu! It would also be delicious with a fried egg on top of the veggies - the important part of this recipe is the sauce, so have fun with it and see what works for you!
Can I use a different cabbage?
Yes! Use whatever you can find, but if you CAN find Napa Cabbage (AKA Chinese cabbage) - I recommend using it. I find it cooks up so nicely in this dish and is a real treat! But if you are short on time, a bag of pre-shredded cabbage will do just fine! This is definitely a meal you can easily make on a busy weeknight, so do whatever you need to to make life easy on yourself!
Additional substitutions:
Again, use this recipe as a guide and use what you have on hand or can easily find at the store. You can use regular red or white onion in place of the green onion. Soy sauce instead of the coconut aminos and regular hot sauce in place of Sriracha. Additionally - if you don’t have honey, you can use a tablespoon of brown sugar. I have never used anything in place of the rice vinegar - i highly recommend keeping your pantry stocked with rice vinegar! I use it in so many things - it is especially delicious when used in place of regular vinegar in salad dressings.
Making it low-carb:
As I’ve mentioned before, I don’t eat carbs at dinner most nights. This version makes a great meal prep idea for lunch, but for dinner I would simply omit the rice and serve it on the side for the kids to have. If you can find the microwaveable brown rice, go for it! I love the Trader Joe’s frozen brown rice and you can find similar options at your regular grocery store.
