Shaved Brussels Sprout Hash

This hash recipe is a great way to enjoy Brussels sprouts - they get crispy and nutty in flavor and the butternut squash adds a mild sweetness. You can use any seasoning you like, but I LOVE the mix of flavors you get from the Everything But the Bagel Seasoning!
This recipe is NOT just for breakfast! We have had this for dinner multiple times as a side to omelettes or fried eggs - you could also serve with sausage or a bunless burger! It also re-heats surprisingly well in the microwave.
Shaved Brussels Sprout Hash
Ingredients
- 12 oz bag shredded Brussels sprouts (or use your food processor to shred them)
- 1 cup small, diced butternut squash or sweet potato
- 1 tablespoon Everything But the Bagel Seasoning
- 1 tablespoon olive oil
- 1/2 cup shredded extra sharp cheddar
Instructions
- Preheat oven to 425 degrees.
- Mix shredded Brussels sprouts, butternut squash, seasoning, and coat well with olive oil.
- Place on thin layer on your largest baking sheet, lined with parchment paper.
- Bake for 25 minutes until edges of vegetables are browned and make sure to toss halfway through cooking time.
- Sprinkle cheese on top of hash and bake an additional 3-5 minutes until melted and bubbly.
