Roasted Honeynut Squash Tacos
Have you tried honeynut squash, yet?! I found my first honeynut squash at Trader Joe’s a few years ago and now I look forward to them every Fall. If you’re in search of a great honeynut squash recipe, you’re in the right place!
What are honeynut squash?
Honeynut squash are basically mini butternut squash, but with a nuttier and sweeter flavor, a darker orange flesh and thin skin. As you can see in the photo below, they look like a mini butternut, but they do have a slightly darker skin with subtle stripes.
These delicious winter squash are normally available for a short period of time in late September and early October. They do not last as long on your countertop so plan to use them within a week or so of purchasing.
Where can you buy honeynut squash?
I first encountered honeynut squash thanks to good old Trader Joe , but since then I have found them in various grocery stores. I have not found them in my general grocery store, but instead have seen them at Whole Foods, the local farmers market and this year I have purchased them through Misfits Market! How to prepare honeynut squash?
You can prepare sweet honeynut squash much like any winter squash. Puree, soups, and roasting are all great ideas. These are also the best way to cook them if you want to freeze them for enjoying beyond their season.
You can substitute honey nut squash for almost any sweet potato or butternut squash recipe. Serve stuffed honeynut squash as a main dish or use any number of delicious recipes as a side dish. If you’re looking for a new vegetable to add to your menu, this is definitely my top pick!
These are the cutest squash ever and their natural sweetness lends themself nicely to any recipe that includes some maple syrup or brown sugar. In my opinion, honeynut squash is better tasting than traditional butternut and I love butternut squash!

Roasted Honeynut Squash Tacos
Ingredients
- 2 small honeynut squash, cut into bite size pieces
- 6 mini bell pepper sliced into rings, seeds removed
- 2 jalapeno peppers, sliced into rings, seeds removed
- 1/4 cup diced red onion
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon kosher salt
- olive oil or avocado oil spray
- 15 oz can of black beans, rinsed and drained
- 1 cup cooked brown rice
- juice of one lime
- handful of chopped cilantro
- 12 taco shells of your choice
- Optional toppings:
- pico de gallo
- guacamole
- sour cream
Instructions
- Preheat oven to 425 degrees.
- Line a large sheet pan with parchment paper.
- Peel your honey nut squash and using a sharp knife, chop into bite-size small pieces.
- Combine honeynut squash, peppers, jalapeno peppers, onion, chili powder, cumin, and salt in a large bowl.
- Spread honeynut squash mixture on baking sheet.
- Spray with a little bit of olive oil to coat evenly.
- Place in oven and roast for 25 minutes total, stirring every 5-10 minutes for even cooking. Cooking time may vary based on your oven, so make sure they are cooked through and tender.
- While squash mixture is cooking, place the rice, black beans, and cilantro in a large bowl.
- Once squash mixture is cooked, add to bowl and mix with juice of one lime.
- Assemble tacos, using 1/3 cup squash mixture, then top with your favorite taco toppings.
- This filling makes a great main dish for meal prep vegetarian taco bowls as well!
