Oatmeal bake is a great recipe for busy mornings - I like to bake a pan on Sunday as a make ahead breakfast for weekdays. Regular oatmeal can be time consuming and hard to eat on the go. This easy baked oatmeal can be cut into individual portions ahead of time and stored in an airtight container. This is a very easy on-the-go healthy breakfast.

Substitutions

You can easily substitute many of the ingredients to suit your preferences. I like to mix blueberries and some strawberries, but you could easily do all blueberries or frozen mixed berries. For a more decadent dessert you could use chocolate chips!

If you’re dairy-free, use coconut milk or almond milk in place of whole milk. Use margarine or coconut oil in place of butter.

Flax Eggs Recipe (makes substitution for ONE egg)

Simply mix 1 tablespoon ground flax seed with 2 1/2 tablespoons water. Let sit for 5 minutes until thickened. This makes ONE “flax egg”. To make the baked oatmeal recipe you will need TWO flax eggs, so double the flax egg recipe.

What to serve with your baked oatmeal

Baked oatmeal makes a great carb for breakfast, but you may want to add some protein so you stay full and satisfied. If you are in my Nutrition Bootcamp, you know half carb/half protein is the best way to start your day. I recommend having your Shakeology, eggs, cottage cheese, or some Greek yogurt with your baked oatmeal.
