Roasted Shishito Peppers
1 pound fresh shishito peppers
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
2 teaspoons olive oil
Preheat oven to 425
In large mixing bowl toss together all ingredients until peppers are evenly coated.
Place on large sheet pan and roast in oven for 10 minutes - toss to brown evenly and place back in oven for additional 2-3 minutes until tender and cooked through.
Delicious on their own as a side dish - or serve as an appetizer with your favorite sauce or dip!
*Note - while most shishito peppers are mild, it is estimated that 1 in 10 are VERY spicy, so watch out!
