Quinoa-Tabouli Salad

1 cup cooked quinoa, cooled

2 handfuls of Curley parsley roughly chopped

1 small cucumber, seeds removed and chopped

1 cup grape tomatoes, chopped

1/4 cup red onion, minced

Juice of 2 lemons

2 garlic cloves, minced

1 tablespoon olive oil

Salt + pepper to taste


Mix all ingredients together and enjoy! Its even better after sitting in the fridge overnight!
