Crispy Air Fryer Breakfast Potatoes with Peppers and Onions

Looking for easy air fryer breakfast potatoes?! These crispy breakfast potatoes are a great side dish for a hearty and healthy breakfast. This is my favorite way of serving breakfast potatoes - just see how easy they are to make!
The Ingredients
With just a few simple ingredients you can make this delicious breakfast side dish!
Russet Potatoes - I use russet potatoes in this recipe, but you could use Yukon Gold or red potatoes. You could even use sweet potatoes. Make sure your diced potatoes are similar in size, so they cook evenly.
Green Bell Pepper - I prefer green bell peppers, but if you have red, yellow, or orange bell peppers, you could certainly use those.
Red Onion - you could use yellow onion here, but red is my fave!
Jalapeño pepper - this ingredient is optional, but I’m a big fan of adding in some spicy flavor whenever I can. The crispy bits of jalapeño are soooo tasty!
Seasoning - I’ve provided a basic seasoning suggestion for you, but use any savory seasoning you like. I often keep things simple by seasoning with Lawry’s seasoned salt.
Olive oil - I prefer the flavor of olive oil, but you could use any mild flavored oil like avocado, canola or vegetable oil.
How to make easy air fryer breakfast potatoes
First, chop your potatoes and veggies. Wash your potatoes with a scrub brush, but do not peel the potatoes. Make sure to chop your potatoes, peppers and onions in uniform pieces. This will ensure you have evenly cooked, crispy potatoes. Do not dice the peppers and onions too small or they will burn and crumble!
Next, place your potatoes in a medium sauce pan and add cold water just enough to cover your potatoes. Also, salt your water with 1 tsp of salt. Once your water comes to a boil, turn down the heat to simmer for about 10-12 minutes until potatoes are cooked through and tender.
Do not forget this important next step! You are going to take a fork and stir your cooked potatoes, gently roughing up the edges of the potatoes. This will help your potatoes get that beautiful crispy exterior from the air fryer! See the little bits of potato crumble in the photo below? This is what you want your potatoes to look like.
Add your potatoes, veggies, and seasoning to a large bowl and stir to combine. Then add your oil - using the air fryer is the best way to use minimal oil and still get restaurant quality crispy home fries. For best results you may want to lightly spray the top of the potatoes with oil after stirring each time.
Place the mixture in a single layer in your air fryer basket. Air fry at 400 degrees, stirring every 10 minutes for *25-30 minutes until potatoes are cooked through and have a crispy exterior. If you do not have a toaster-style air fryer, you can simply stir your layered potatoes mixture every 5 minutes or so to ensure even cooking.
