BBQ Pineapple Chicken Skewers

Ingredients:

1 very ripe pineapple, cut into bite size chunks

4 chicken breasts

1 large red onion cut into 1 inch bite size pieces

1 large red bell pepper cut into 1 inch bite size pieces

1 large green bell pepper cut into 1 inch bite size pieces

1 cup barbecue sauce ( I used a mix of spicy and regular)

wooden skewers

Directions:

  1. soak wooden skewers in water for 20 minutes (I used a 9x13 baking pan to soak them)

  2. once skewers have soaked, thread pineapple, chicken, peppers, and onions on each skewer

  3. brush with barbecue sauce until all sides are coated thoroughly - marinate for 1 hour

  4. preheat grill to medium-high heat

  5. place skewers on grill and cook 5-6 minutes on each side until chicken is cooked through

Serve with cauliflower rice or salad.
